Our brigade brings together complementary talents, united by the same vision: to keep the tradition of the great Belgian brasseries alive while bringing creativity and exacting standards to every dish. Every day, our chefs select fresh produce, respect traditional recipes and offer generous, homemade cuisine faithful to the spirit of Le Roy d’Espagne.

Bruno Lesbats – Executive Chef
Bruno Lesbats brings a gastronomic and creative dimension to Le Roy d’Espagne. A talented and visionary chef, he built his career across several prestigious establishments. He worked notably in Michelin-starred restaurants such as Guy Savoy and Le Carré des Feuillants in Paris, before continuing his career at recognised Brussels institutions including Le Mess and les Brasseries Georges. Drawing on this experience, Bruno Lesbats excels in the art of reinterpreting great classics with refinement and modernity. His commitment to gastronomy is further recognised by his distinctions: member of Euro-Toques, Maître Rôtisseur and Academician of the Académie Culinaire de France since 11 April 2026.
Bidros Bido – Executive Chef
Having been part of Le Roy d’Espagne for many years, Bidros Bido is a cornerstone of the house kitchen. An experienced and meticulous chef, he has a masterful command of brigade organisation and service management, particularly during major events where the kitchen can serve up to 350 guests. Recognised for his coordination skills and consistent quality, he brings to every dish the care and perseverance needed to achieve a perfect balance of flavours.
Chef Michael – Head Chef
After many years working across Asia, Chef Michael brings the brigade an international background and a remarkable breadth of culinary knowledge. His journey allows him to offer a fresh perspective on produce, techniques and flavours, which he shares with the whole team in a spirit of exchange and mentorship.
Chef Mustapha – Second Chef
Alongside them, Mustapha, a willing and curious second chef, plays an essential role in the brigade’s dynamic. Always ready to learn and take on new challenges, he is actively involved in preparing dishes and maintaining the consistent quality of every service.
Front of House
At Le Roy d’Espagne, hospitality is part of the Brussels art de vivre. Our front-of-house team, international and multilingual, ensures that every visitor feels at home, whatever their language or background. Eight languages spoken, one single goal: to welcome you with a smile in the heart of the Grand-Place.
Stéphane Siaens – Director
The true conductor of Le Roy d’Espagne, Stéphane Siaens ensures every day that the welcome is worthy of the setting. Under his direction, the front-of-house team upholds the spirit of the great Brussels brasseries: conviviality, professionalism and a true sense of service. Attentive to every detail, he makes sure that every visitor, whether a long-standing Brussels local or a passing traveller, feels genuinely at home, facing the Grand-Place.
Monsieur Mohammed – Maître d’hôtel
Known to everyone as Monsieur Momo, he embodies the Brussels art of hospitality. As maître d’hôtel, he oversees the elegance of service, the rhythm of each table and the well-being of every guest throughout the meal. Always attentive, he anticipates a need, offers a recommendation or provides the small touch of care that makes all the difference. He also takes the helm when it comes to organising groups, banquets and private events, coordinating every detail to ensure that receptions facing the Grand-Place are worthy of the setting.
Monsieur Eddy – Floor Manager
A discreet but essential presence, Monsieur Eddy ensures the smooth running of every service with professionalism and care. Leading the front-of-house team, he orchestrates the day-to-day with constant attention to the quality of the welcome and the comfort of every guest. His organisational skills and deep knowledge of the house make him an anchor for the entire team.
Our welcoming team
Our front-of-house team is the smiling face of Le Roy d’Espagne. Every day, these women and men welcome visitors to the Grand-Place with warmth and attentiveness, in the finest tradition of the great Brussels brasseries. Some have been here for a long time, such as Stéphane, loyal to the house for over 30 years, or Lucas, always at his post from early morning to welcome the first guests at breakfast.
Others, like Malaika and Lucianno, stand out for their kindness and their command of many languages, while Tatiana and Rachel impress with their smiles and efficiency. The next generation is in good hands with Sara and Fleur, enthusiastic new recruits.
At the bar, Olivier, Julien and Tom ensure that every beer is served to perfection, an essential role in a brasserie offering around forty Belgian beers. And a special mention for the students who join us throughout the year and contribute their own energy and good humour to the floor.
In total, the team speaks no fewer than eight languages: French, Dutch, English, Spanish, Italian, Russian, Chinese and Japanese. A remarkable asset that allows us to welcome visitors from around the world in their own language and ensure that everyone truly feels at home in the heart of Brussels.
At the helm of Le Roy d’Espagne
Jean-Philippe Bosman – Owner
Passionate about Brussels heritage and hospitality, Jean-Philippe Bosman took over Le Roy d’Espagne to breathe new life into it and bring a touch of modernity while reawakening the soul of this historic house. Also at the helm of La Terrasse in Mérode, he brings to Le Roy d’Espagne extensive experience in the hospitality industry and a vision deeply rooted in Belgian terroir. Committed to short supply chains and quality produce, he works every day with local producers to offer the Grand-Place an authentic, generous brasserie faithful to the Brussels spirit. He is also the creator of the house’s exclusive beer, La Roy d’Espagne, crafted by artisan brewing.
Patricia Cornet – Commercial and Marketing Director, co-manager
Trained as an interior architect, Patricia Cornet built her career in the development and promotion of SMEs before joining the Le Roy d’Espagne adventure. Today a true driving force behind the house, she leads commercial development, digital communications and press relations. She also manages group reservations of more than 25 people, both for Le Roy d’Espagne and for Brasserie La Terrasse. Creative and passionate about events, she is the co-creator of several immersive concepts: Christmas Fairies, medieval evenings and themed events that bring the Grand-Place to life throughout the year.
